It is the age old question of outdoor grilling: Lid up or down?

Of course there is a lot more to this question than simply up or down.

There are so many variables!

When youre cooking on a ceramic grill like our Big Green Eggs or Primos you would usually cook with the hood down.This is because you want to trap the heat for a low and slow cook.By adding hardwood chips or chunks like hickory wood, mesquite or even fruit woods like apple and cherry you want to get the flavor of that smoke into whatever youre cooking.If you raise the hood you lose that flavor.Wilshire Fireplace also sells the different hardwood chunks and chips used in smoking.

You can also obtain temperatures in the 700 degree range on the Big Green Egg and Primo Ceramic Cookers.With the addition of a pizza stone, heated in the cooker to these high temperatures you can have that mesquite grilled taste on your pizzas.Just like in the restaurantsbut at home.

However there are times when using a ceramic grill that you might want the hood up.If you have a thin cut of meat or vegetables, they wouldnt take a lot of time to cook.Get your Egg up to temperature and cook like on an open fire.
